Camp First Cook - Breakfast Lead

Location: Brooks Camp, Prudhoe Bay, AK
Schedule: Full-Time | Rotational 3 Weeks On / 3 Weeks Off

Lead the Day Before It Begins

Brooks Camp is seeking a Camp First Cook - Breakfast Lead to oversee overnight breakfast operations and help deliver exceptional food service to employees and guests on Alaska's North Slope.

This is a senior kitchen position responsible for leading the overnight breakfast team, coordinating meal preparation, ensuring food safety compliance, and delivering a high-quality breakfast service each day. The First Cook serves as the shift leader for overnight kitchen operations, providing direction to Second Cooks, General Helpers, and support staff while maintaining communication with kitchen management.

What You'll Do

Lead Breakfast Operations

  • Oversee overnight breakfast production and ensure all menu items are prepared and ready for service
  • Coordinate and direct the activities of Second Cooks, General Helpers, and support staff during the shift
  • Monitor workflow and adjust priorities to ensure timely meal service
  • Serve as the lead point of contact for overnight kitchen operations
  • Communicate operational issues, equipment concerns, inventory shortages, and service impacts to kitchen management

Food Preparation and Service

  • Prepare and cook breakfast items including eggs, breakfast meats, potatoes, baked goods, breakfast sandwiches, burritos, pancakes, waffles, French toast, and daily specials
  • Set up and maintain omelet and breakfast stations
  • Ensure food quality, consistency, presentation, and proper portion control
  • Monitor serving lines during service and ensure products remain stocked and fresh
  • Assist with airport and grab-and-go meal preparation as needed

Food Safety and Quality

  • Follow all food safety, sanitation, and HACCP requirements
  • Maintain accurate temperature and cooling logs
  • Ensure hot and cold foods are held at proper temperatures
  • Monitor cleanliness and sanitation throughout the kitchen and dining areas
  • Lead by example in maintaining food safety standards

Team Leadership

  • Provide guidance, training, and direction to kitchen team members
  • Promote teamwork and accountability during overnight operations
  • Ensure daily cleaning tasks, organization projects, and kitchen responsibilities are completed
  • Support a positive and productive work environment

Kitchen Operations

  • Assist with inventory control, freezer pulls, and supply management
  • Maintain organization of walk-in coolers and freezers
  • Ensure equipment is cleaned and maintained according to established procedures
  • Complete required opening and closing duties for the shift

What We're Looking For

Required Qualifications

  • Previous experience as a cook in a commercial, industrial, institutional, camp, or high-volume food service environment
  • Demonstrated ability to lead and coordinate the work of others
  • Valid Alaska Food Handler Card or ability to obtain upon hire
  • Strong knowledge of food safety and sanitation practices
  • Ability to work independently and make decisions in a fast-paced environment
  • Excellent communication and organizational skills
  • Ability to work overnight shifts in a remote camp environment
  • Ability to pass:
    • Pre-employment non-DOT drug screening
    • Criminal background check
    • Fit-for-duty medical evaluation

Preferred Qualifications

  • Experience in remote camp, oilfield, mining, military, or institutional food service operations
  • Experience leading kitchen teams or serving in a senior cook role
  • Experience preparing large-volume breakfast service
  • Culinary training or related certifications

Physical Requirements

  • Ability to stand and walk for extended periods
  • Ability to lift and carry up to 50 pounds
  • Ability to bend, stoop, reach, push, and pull throughout the shift
  • Ability to safely operate commercial kitchen equipment
  • Ability to work in a fast-paced kitchen environment
