Job description

Executive Chef

As an executive chef at Bobbie's, a historic stainless-steel diner serving breakfast and lunch fare, you will oversee all kitchen operations, maintaining SCAD standards of food quality, service, and presentation. Working with the executive director and director of fine dining, you will develop and implement innovative menus catering to diverse dietary needs. Responsibilities include menu and schedule creation, cost control, and oversight of all kitchen operations. You will work closely with the front-of-house managers and service staff and plan and complete catering services for special events. You will handle inventory and food purchases to maintain cost efficiency without compromising quality.

In this role, you will supervise and mentor kitchen staff while fostering professional growth. You will ensure compliance with safety regulations and best practices in food handling and preparation. You will also maintain equipment and space, creating a regular cleaning schedule. Additionally, you will implement staff training programs on cooking techniques, food safety, and customer service.

The ideal candidate exercises independent judgement and discretion while demonstrating excellent leadership, communication, and collaboration. The candidate should also have an extensive knowledge of dining concepts and restaurant management.

Minimum qualifications: 

  • Background in menu planning, food production, and kitchen management, food costs, plate costs, and dish rotation
  • At least five years of kitchen management experience, preferably in a casual, high-volume setting
  • Proven success as an executive chef or in a similar role within the culinary field.
  • Experience leading and inspiring a kitchen staff
  • Familiarity with inventory management cost control measures

Certificates, licenses, and registrations:  

  • ServeSafe certification (federal and local) 

Travel required:  

  • Less than 10% 

Work hours:The university work week is Sunday through Saturday. Most offices are open Monday through Friday 8:30 a.m. to 5:30 p.m. To accommodate business needs, employees may be assigned to other workdays and/or hours, including weekends and evenings.
