Job Summary
Cooks are responsible for preparing and cooking a variety of food items from scratch, including slicing and dicing vegetables, trimming proteins, and preparing fruits, salads, and other menu items. Duties include cooking, grilling, searing, smoking, braising, baking, and deep-frying to ensure high-quality food service to guests. Cooks must be able to follow recipes and adhere to daily procedures specific to their assigned station. Areas of service include Big Red’s BBQ, Pizza Spot, where freshly made pizzas are prepared using a belt-driven impinger oven; and Armadillo Grill, serving burgers and other grill fare. This role requires attention to detail, consistency, and a commitment to delivering an excellent guest experience through quality food preparation.
Essential Functions
To succeed in this role, individuals must perform all essential functions effectively, with reasonable accommodation provided as needed.
  • Basic understanding of kitchen operations utilizing a variety of cooking equipment and tools.
  • Must be able to operate standard commercial kitchen equipment in a safe manner following procedures and guidelines established by Management. Kitchen equipment is defined as but not limited to 48” grill, 48” griddle, deep fryer, 6 burner stove, double stack oven, warming boxes and commercial smoker.
  • Handle kitchen knives and equipment safely for your protection and the protection of others.
  • Must maintain good personnel hygiene throughout entire shift, performing safe food practices up to and including use of hairnets, head covering, latex gloves.
  • Proper handwashing numerous times throughout entire shift is required.
  • Ensure sanitation procedures and safe cooking procedures are followed at all times.
  • Follow recipes and cooking procedures provided through both oral and written instruction without any deviation unless approved by Management.
  • Must have knowledge of restaurant chemicals and how to properly use those chemicals in a food service environment. This includes but is not limited to degreasers, floor cleaners, window cleaners, all-purpose cleaners, and sanitizing agents.
  • Must have manual dexterity of hands to grasp, pinch, cradle, hold various kitchen utensils and equipment.
  • Multi-task while being attentive to guests and remain flexible to the needs of the business.
  • Make certain all company policies and procedures are adhered to by guests.
  • Always ensure a safe working environment for both internal and external guests.
  • Work as part of a team and take initiative independent of direct supervision.
  • Follow all company policies and procedures while protecting company assets.
  • Maintain the overall cleanliness of the park.
  • Report any theft or suspicious activity to management.
  • Maintain clean and tidy checkout areas.
  • Take pride in wardrobe amp; appearance.
  • Assist other departments as staffing needs require.
