Las Perlas is an Oaxacan-style cantina at Sixth and Main in downtown LA, a living tribute to Mexico's native spirit. Since 2010 we've built one of the largest agave spirits collections in the country, with 450+ bottles, plus a craft cocktail program, Mexican and local beers, tacos on the patio, and a Mezcal Society that brings producers, brand partners, and agave aficionados through our doors all year.
We're looking for a Bar Lead who loves agave spirits, thrives behind a busy bar, and is ready to take the next step into leadership.
Who we are
Las Perlas is part of Pouring With Heart, a hospitality group operating 24+ bars across California, Colorado, and Texas. Our purpose: For Each Other. We exist to raise the human spirit through community, camaraderie, and connection, for our guests and for our teams.
What you'll own (not limited to)
The agave. Build your knowledge of our 450+ bottle collection and help bring it to life for guests and the team. Learn the producers, regions, varietals, and production methods while helping us keep Las Perlas one of LA's destinations for agave.
The shift. Help lead the energy and execution of the floor. Set the pace behind the bar, support the team, solve problems in real time, and make sure great hospitality stays at the center of every shift.
The team. Lead by example. Help train and mentor bartenders and barbacks, reinforce standards, communicate with the Bar Leadership Team, and contribute to a crew people want to be part of.
The business. Work alongside your GM to learn and support the numbers behind the bar, including inventory, ordering, labor, waste, cocktail costing, cash handling, and weekly financial goals.
The community. Support Mezcal Society events, tastings, brand partnerships, cocktail programming, and activations that keep Las Perlas connected to the agave world and the Downtown LA community.
Who you are
3+ years of bartending experience in a high-volume or cocktail-focused bar.
Previous lead, supervisor, or management experience preferred, or you're a strong bartender ready to take that next step.
You have real interest in agave. Maybe you already know producers, regions, and production methods, or maybe you're ready to seriously deepen your knowledge. Curiosity matters here.
You're comfortable leading a busy shift, communicating expectations, solving problems, and supporting your peers.
You understand the fundamentals of bar operations and want to learn more about inventory, labor, ordering, costing, waste, and the business behind the bar.
You can balance creativity with execution, whether that's building cocktails, improving systems, or helping bring an event to life.
Current or willing to obtain: RBS certification, LA County Food Handler card and other state required certificates.
Available nights, weekends, and holidays.
Partner with your GM to identify leadership goals, areas for growth, and opportunities to take on greater responsibility.
Collaborate on cocktail menus, ensuring creativity, guest appeal, consistency, and cost-efficiency.
Support planning and execution of Mezcal Society events, tastings, activations, and community engagements aligned with the Las Perlas brand.
Partner with vendors, brand representatives, and marketing teams to help drive exposure, awareness, and revenue growth.
Close the bar and accurately handle nightly cash, drops, and tip outs.
Assist with inventory, ordering, prep systems, weekly budgets, and operational needs.
Help develop systems that improve consistency in service, prep, cleanliness, and overall bar operations.
Support the Bar Leadership Team by leading by example, mentoring peers, and fostering a culture of hospitality and accountability.
Participate in training sessions, team meetings, tastings, and leadership development opportunities.
Represent Pouring With Heart with professionalism, authenticity, and pride in every interaction.
Physical Requirements
Must be able to work on your feet for extended periods (up to 8 hours)
Ability to lift and move up to 50 pounds
Fast-paced movements and mobility required to cover bar and floor space efficiently
