Position Summary

The Specialty Fish Cutter is responsible for picking and processing all species of fish, including tuna and sword, and assist cutting portions to all specifications under guidance from the Senior Fish Cutter or Seafood Production Manager while maintaining the highest possible industry standards.


Duties and Responsibilities

  • Efficiently process fish to customer specs, while obtaining highest possible quality yields
  • Responsible for proper packaging and presentation of hand cut items
  • Responsible for scaling, pin-boning, processing whole fish, and making boxes/ice, as needed
  • Sanitize cutting boards and knives
  • Inspect all equipment, including tools, pin bone machine, scales and hoses daily
  • Assure all labels are clear and readable and have the country of origin on them
  • Properly clean and maintain the seafood areas in accordance with G.M.P's and SQF standards

Requirements

Qualifications

  • At least 1 year of experience of fish cutting/processing
  • Ability to identify product by size, type, or product code
  • Solid reading skills - must be able to read cut sheets and special instructions as required
  • Possess basic math and reasoning skills
  • Ability to take direction from Manager/Supervisor and to understand and execute instructions to ensure efficiency
  • Possess general understanding of the warehouse and footprint

Working Conditions

  • Ability to move/lift up to 100 lbs.
  • Ability to withstand cool/cold temperatures in a typical food warehouse and processing environment
  • Position spends 6 - 8 hours standing, walking, lifting, pulling and pushing
  • Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception and ability to adjust focus
