Job description
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. This list is meant to be representative, not exhaustive. Some incumbents may not perform all the duties listed while in other cases related duties may also be assigned. - Responsible for efficient scheduling of all production lines, minimizing kitchen assistant wait time for assembly belt set up, product change on an active line, transition between job tasks, including assembly line changes.
- Schedule assembly line production utilizing menu and production records prior to day and week production.
- Lead and monitor the assembly of all types of meals using time and temperature controls. Utilize time and temperature control sheets and any forms requiring monitoring of procedures within the kitchens of the district. Prepare and monitor temperature and production controls and reports of assembly line food. Call schools regarding temperature control issues and report to Supervisor.
- Responsible for stopping production if food appearance, safety or sanitation standard concerns are raised about food product and call in supervisor for direction.
- Work as a team with other Leads and kitchen managers to assure procedures are followed in the production of quality, safe, and sanitary meals.
- Monitor packaging of food for appearance, temperature, packaging at regular intervals.
- Perform quality control of product to include portion control and quality on a general basis.
- Complete central kitchen paperwork manually and/or data entry on computer production software on a daily basis.
- Responsible to keep assembly line in clean, sanitary meal production. Promptly report any mechanical or technical issues with assembly lines including any issues with reliable operations.
- Perform minor mechanical and technical adjustments to assembly lines and depositors, including changing of settings for film, speed, cutting and correction of jamming.
- Train selected staff in the operation, cleaning and adjustment to assembly lines.
- In a team model, delegate, instruct, and inspect others' work, as well as assuming an actual portion of the work.
OTHER RESPNSIBILITIES:
- Schedule breaks to not interfere with production
- Answer department phone
- Operate a variety of other food service and cleaning equipment
- Assist Special Diet Lead prepare and pack special diet meals
- Complete special projects assigned by the Director of Nutrition Services, such as completing production efficiency and or portion control studies
- Cross train with other Leads and be skilled in the ability to Lead work in different central kitchen areas
- Attend and participate in regular (often-weekly) meetings, including meetings where menu and work load are discussed.
- Practice safety and secure meal practices
- Collaborate with other department heads, custodians, truck drivers and other personnel as needed
- Federal Way Public Schools require employees to adhere and comply with the State of Washington and King County Department of Health food code
- Practice ethical and professional standards of conduct including the requirements of confidentiality
- Schedule staff according to management practices and bargaining unit agreements, as required
- Must be able to perform the essential functions of the job with or without reasonable accommodations
REQUIRED QUALIFICATIONS:
Education and Experience
High School Diploma or equivalent
Two years of experience as a kitchen assistant at central kitchen
ADDITIONAL REQUIREMENTS:
Regular and punctual attendance
History of positive evaluations
Experience in a production facility, working in a foodservice industry in a leadership role
Possess the skills, knowledge and ability to meet job responsibilities and be willing to continue professional growth
PREFERRED QUALIFICATIONS:
Completed coursework in quantity foodservice, institutional management, nutrition
Hazard Assessment Critical Control Plan (HACCP) certification preferred
National School Lunch Program experience
Member School Nutrition Association (SNA), Washington School Nutrition Association (WSNA)
CONDITION OF EMPLOYMENT:
Criminal background clearance

Valid Food Handler's Permit
Valid Washington State Driver's License
"Serv Safe" certificate required within 1 month of hire

While performing the duties of this job, the employee will frequently stand and walk, bend neck and back, use hands for repetitive grasping and pushing/pulling. While performing the duties of this job, the employee regularly works in indoor conditions and intermittently works near video display. WORK SCHEDULE
Work schedules typically involve a variety of report times from early morning hour production to late afternoon, and shifts of 7-8 hours per day, with occasional overtime.
