Job Title: Corporate Meat Manager
Primary Supervisor: VP of Perishables and Marketing

Job Summary

The Corporate Meat Manager is responsible for overseeing meat department operations across all store locations, ensuring consistency in quality, customer service, merchandising, and operational excellence while upholding Broulim's TREK values and mission statement. This role provides leadership and strategic direction for all meat departments by driving sales, managing vendor relationships, maintaining food safety and regulatory compliance, developing store-level meat managers, and ensuring exceptional product quality. The Corporate Meat Manager partners with store leadership and corporate teams to maximize profitability, optimize operations, and deliver an outstanding shopping experience.

Essential Duties and Responsibilities

  • Oversee and support meat department operations across all store locations, ensuring consistent execution of company standards and expectations.
  • Develop and implement sales, merchandising, and promotional strategies to increase meat department sales and profitability.
  • Manage vendor relationships, including product selection, pricing negotiations, and promotional opportunities to maximize value and quality.
  • Ensure consistent product quality, freshness, merchandising standards, and presentation throughout all meat departments.
  • Monitor inventory levels, ordering practices, shrink, yield, and gross profit performance to maximize department profitability.
  • Develop and maintain cutting, packaging, and merchandising standards to ensure consistency throughout the company.
  • Assist with and ensure the training, coaching, and development of store-level Meat Managers and department team members in product knowledge, cutting techniques, merchandising, food safety, customer service, and operational best practices.
  • Ensure compliance with all federal, state, local, and company food safety, sanitation, OSHA, and health regulations.
  • Analyze sales, margin, shrink, labor, and operational performance data to identify opportunities for improvement and implement corrective action plans.
  • Support labor planning and scheduling practices to improve productivity while maintaining excellent customer service.
  • Provide guidance and support to store leadership by troubleshooting operational issues and responding to department needs.
  • Assist with new store openings, remodels, acquisitions, and department resets, ensuring meat departments are properly staffed, stocked, merchandised, and trained.
  • Collaborate with corporate leadership, merchandising, marketing, and store management to align meat department strategies with company goals.
  • Stay informed on industry trends, product innovations, customer preferences, and competitive pricing to maintain a strong market position.
  • Perform other duties as assigned to support the overall success of meat department operations.

Knowledge

  • Extensive knowledge of retail meat department operations, including meat cutting, merchandising, production, pricing, and inventory management.
  • Knowledge of fresh meat products, seafood, value-added products, and seasonal merchandising.
  • Thorough understanding of food safety regulations, sanitation practices, HACCP principles, and OSHA requirements.

  • Five (5) or more years as a Journeyman meat cutter with progressive retail meat experience.
  • 5-10 Years of Meat Department Management in high volume stores.
  • Multi‑store management experience preferred.
  • Demonstrated leadership experience with a proven ability to drive sales, profitability, operational excellence, and team development.
  • Comprehensive knowledge of fresh meat merchandising, food safety regulations, and inventory management.
  • Valid driver's license with the ability to travel frequently between store locations.
