Position Description: POSITION SUMMARYThe Commissary Operations Manager is responsible for overseeing all commissary logistics, bulk production, transportation and quality control execution across multiple service channels.This is not a creative chef role. The menu, recipes, and systems are fully developed. Success in this position is defined by consistency, efficiency, inventory discipline, and the ability to scale production without compromising quality.CORE RESPONSIBILITIES:1. Commissary & Production Oversight– Lead and manage all bulk production operations supporting restaurant and retail outlets– Execute daily, weekly, and par-based production schedules aligned with business volume– Ensure all recipes are followed with precision — no deviation from established standards– Oversee prep teams to maintain speed, consistency, and accuracy in high-volume output– Drive readiness for peak days, holidays, and large-scale events2. Inventory Management (FIFO-Focused)– Enforce strict FIFO (First-In, First-Out) systems across all storage and production areas– Manage weekly and/or biweekly inventory counts, including end-of-month reconciliation– Monitor product usage, yields, and waste to maintain tight cost controls– Ensure all products are properly labeled, dated, rotated, and stored– Collaborate with procurement to maintain appropriate pars and ordering cadence3. Quality Control & Standards– Act as the final checkpoint for all product leaving the commissary– Maintain chef-driven standards for taste, portioning, and presentation– Conduct routine quality audits across all production categories (savory, bakery, breakfast, etc.)– Identify and correct inconsistencies in product execution immediately– Train and hold team accountable to established standard operating procedures4. Logistics & Distribution– Oversee the flow of product from commissary to restaurant locations and events– Coordinate packing, labeling, and transportation standards– Ensure all deliveries are accurate, timely, and meet quality expectations upon arrival– Build systems that support scalability for multi-unit growth5. Team Leadership & Development– Lead, schedule, and develop a team of production cooks and support staff– Maintain a culture of accountability, urgency, and consistency– Train team members on production standards, food safety, and inventory systems– Partner with leadership on staffing needs and performance management6. For a bonus to be earned for an applicable period, all required performance standards must be achieved.
