Restaurant Manager – Moby’s
Since opening in 2012, Moby’s has become a Hamptons institution, known for its Coastal Italian–influenced menu, expansive garden, and high-energy summer service. With nearly 300 seats, a large seasonal team, and a fast-paced operating environment, Moby’s requires strong operational leaders who thrive on the floor and are passionate about hospitality.
We are seeking a Restaurant Manager who is highly organized, guest-focused, and committed to building strong teams. This role reports directly to the General Manager and plays a critical part in ensuring exceptional execution of service standards, staff performance, and guest experience throughout the season.
This position is ideal for a leader who enjoys being present on the floor, coaching teams in real time, and maintaining consistency during high-volume operations.
What to Expect
This role requires energy, visibility, and a hands-on approach to leadership. You will spend the majority of your time actively managing service, supporting the team, and ensuring that every guest interaction reflects the standards of Moby’s.
You will work closely with the General Manager, fellow managers, culinary leadership, and guest relations teams to ensure smooth operations across all service periods.

Key Responsibilities
• Lead daily floor operations during lunch, dinner, and special events
• Manage and support hosts, servers, bartenders, support staff, and supervisors
• Conduct daily pre-shift meetings and communicate operational priorities
• Monitor service flow and adjust staffing and floor plans as needed
• Ensure all guest interactions meet Moby’s hospitality standards
• Resolve guest concerns professionally and effectively
• Train, coach, and develop front-of-house employees
• Support recruitment, onboarding, and performance management initiatives
• Maintain cleanliness, organization, and presentation standards throughout the property
• Ensure compliance with company policies, safety standards, and operating procedures
• Partner with culinary and bar teams to ensure smooth communication and execution
• Assist with scheduling, labor management, and payroll review
• Support private events and large party execution as needed
• Contribute to a positive, collaborative, and high-performing culture
Qualifications
• 2+ years in a Restaurant Manager, Assistant General Manager, or similar leadership role
• Experience in high-volume restaurants preferred
• Strong understanding of hospitality and guest service standards
• Proven ability to lead and motivate teams in fast-paced environments
• Excellent communication, organizational, and problem-solving skills
• Ability to remain calm and effective under pressure
• Experience with scheduling, labor management, and staff development
• Familiarity with Toast and standard restaurant management systems preferred
• Flexible schedule including nights, weekends, and holidays
