Summary of Position

Accurately & efficiently prepare sushi for consumption. Perform other duties in the areas while maintaining a clean, safe and sanitary work area.

Duties and Responsibilities

Essential Functions

  • Prepare sushi for service
  • Ensure that all kitchen equipment is clean and professional in appearance at all times
  • Gather all necessary sushi ingredients and prepare them by washing, chopping, slicing, dicing and assembling them for customer purchase
  • Manage food inventory when necessary
  • Maintain a safe work environment
  • Encourage good customer relations through product promotion
  • Order product in cooperation with Kitchen Manager
  • Maintain food quality standards including consistency and presentation.
  • Prepare ingredients needed for recipes of menu items.
  • Prepare food items according to prescribed recipes.
  • Coordinate proper food storage according to standard operating procedure.
  • Prepare assigned food items. Wash and clean raw food products. Peel, dice, shred and slice food products using kitchen equipment.
  • Measure and assemble ingredients and cook items according to recipes and menu specifications. Grill, deep fry, bake, broil and microwave raw and prepped foods.
  • Complete daily/weekly cleaning and maintenance of equipment.
  • Stock/restock items on line according to specifications.
  • Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
  • Check the quality of raw or cooked food products to ensure that standards are met.
  • Check the quantity and quality of received products.
  • Order food or other supplies needed to ensure efficient operation.
  • Completes food temperature checks before service.
  • Stores food properly and safely, marking the date and item.
  • Reports necessary equipment repair and maintenance to supervisor.
  • Maintains daily production records.
  • Correctly prepares all food served following standard recipes and special diet orders.

Supervisory Responsibility

This position has no supervisory responsibilities.

Work Environment

This position operates in a restaurant setting. The noise level in the work environment can be loud. The employee may be exposed to hazards including, but are not limited to, cuts, slipping, tripping, falls and burns. Frequent hand washing is required. Works in both "Back & Front of the House" kitchen and directly in front of customers.

Physical Demands

Must be able to work all areas of the restaurant and operate kitchen equipment. Position requires standing, bending, lifting, kneeling, and walking the entire workday. Must have the ability to lift 10 pounds frequently and up to 50 pounds occasionally. 

Must vision ability, hearing ability with eye and hand coordination.  Must have professional communication skills. Be able to work in a standing position for long periods of time and maintain exceptional hygiene and grooming habits. 

Position Type/Expected Hours of Work

This position regularly requires long hours and frequent weekend work.

Some travel may be expected for this position.

Requirements

Experience and Education

Required

High School diploma or equivalent

Sushi experience

Preferred

Excellent knife skills in deboning and filleting fish such as Salmon or other similar fish; superb ability with the sashimi knife
