Research & Development Scientist II

General Mills, Inc. has a full-time opportunity for an Research & Development Scientist II in Minneapolis, Minnesota. This position is actively involved in new product strategy, concept development, product formulation, and process development for the consumer food industry for numerous products and business unit initiatives. The position requires a PhD Degree or equivalent in Food Science or a related field and 12 months of experience in food product and process development.

The position also requires 12 months of demonstrated ability in each of the following:

  1. Using food science knowledge and experience (starch gelatinization and retrogradation, salt functionalities, processing aid, flavor enhancers) for designing and executing experiments to determine the effect of food ingredients and processing conditions on the attributes of food products;
  2. Exploring new technologies to enhance the quality of food and optimize cost efficiency in food product manufacturing.

Must also have hands-on experience in each of the following:

  1. Working with food product shelf life/quality testing, management and extension;
  2. Analyzing sensory analysis data and consumers' needs to improve food product designs.

Travel required 10% of time for production trials and/or interacting with consumers. Employer will accept experience gained concurrently & experience gained before, during or after PhD program.
