Job Description: Oversees the daily activities of the restaurant kitchen and of the line cooks. Supervises workers engaged in preparing and serving food; may cover stations as needed. Ensures recipe integrity, meal quality, and guest satisfaction. Responsible for ensuring all food standards established by Traditions Spirits including, but not limited to sanitation duties are fulfilled. These include, but are not limited to the following:Embodies Traditions Spirits Mission, Vision, and Core ValuesExemplifies a positive attitude at all timesCommunicates regularly with the General Manager the activities of the restaurant and its employees to include written reports of the activities at the owner’s requestMonitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance in kitchen facilityPlan menus and food utilization based on anticipated number of guests, nutritional value, palatability, popularity, and costsOrganize and direct worker training programs, resolve personnel problems, and evaluate employee performance in the kitchen facilityCoordinate assignments of cooking personnel in order to ensure economical use of food and timely preparationEstimate food, liquor, wine, and other beverage consumption in order to anticipate amounts to be purchased or requisitionedMonitor food preparation methods, portion sizes, and garnishing and presentation of food in order to ensure that food is prepared and presented in an exceptional mannerMonitor budgets and payroll records, and review financial transactions in order to ensure that expenditures are authorized and budgetedInvestigate and resolve complaints regarding food quality, guest service, or facility cleanlinessReview menus and analyze recipes in order to determine labor and overhead costs, and assign prices to menu itemsKeep records required by government agencies regarding sanitation, and food subsidies when appropriateCreate specialty dishes and develop recipes to be used in dining facilities, estimate ingredients and supplies required to prepare a recipeArrange for equipment maintenance and repairs, and coordinate a variety of services such as waste removal and pest controlEstablish minimum standards for employee performance and guest serviceMaintain food and equipment inventories, and keep inventory recordsMonitor employee and guest activities in order to ensure liquor regulations are obeyedPerform some food preparation or service tasks such as cooking, clearing tables, and serving food and drinks when necessarySchedule and receive food and beverage deliveries, checking delivery contents in order to verify product quality and quantityAssign duties, responsibilities, and work stations to employees in accordance with work requirementsSchedule use of facilities or catering services for events such as banquets or receptions, and negotiate details of arrangements with clientsperformance, and/or safetyForecast staff, equipment, and supply requirements based on a master menuInspect supplies, equipment, and work areas in order to ensure efficient service and conformance to standardsDevelop equipment maintenance schedules and arrange for repairsControl inventories of food, equipment, small ware, and liquor, and report shortages to the ownerPurchase or requisition supplies and equipment needed to ensure quality and timely delivery of servicesEvaluate new products for usefulness and suitabilityPerform personnel actions such as hiring and terminating staff, consulting with other managers as necessaryAnalyze operational problems, such as theft and wastage, and establish procedures to alleviate these problemsCollaborate with other staff in order to plan menus, serving arrangements, and related detailsRecord production and operational data on specified formsSpecify food portions and courses, production and time sequences, and workstation and equipment arrangementsPerform serving duties such as carving meat, preparing flambé dishes, or serving wine and liquorSupervise and check the assembly of regular and special request platesGreet guests, escort them to their seats, and present them with menus and wine listsExplain how various menu items are prepared, describing ingredients and cooking methodsMaintain personal health and sanitation standards (wash hands when using restroom, etc.)Review work procedures and operational problems in order to determine ways to improve service, performance, and/or safetyEstimate food consumption; then requisition or purchase supplies, or procure food from storagePortion, arrange and garnish food as well as assist cashier in the expediting of ordersRegulate temperature of ovens, broilers, grills and roastersSeason and cook food according to recipes or personal judgment and experienceWash, peel, cut and de-seed fruits and vegetables to prepare them for consumptionWeigh, measure and mix ingredients according to spec recipes using various kitchen utensils and equipmentInspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practicesAssist all fellow co-workers as neededGrill, deep fry, bake broil and microwave raw and prepped foodsMeasure and assemble ingredients and cook all items according to specific recipe and menu guidelinesMaintain cooking line in clean, sanitary and safe mannerStock/restock items on line according to specificationsWash and clean raw food productsPeeling, dicing, shredding and slicing food products using electric equipmentExplain how various menu items are prepared, describing ingredients and cooking methodsMaintain personal health and sanitation standards (wash hands when after using the restroom, etc.)Review work procedures and operational problems in order to determine ways to improve service, performance and/or safety RESPONSIBILITIES: NOTE: Traditions Spirits, Inc. ® may change the requirements of this job description at any time.
