Seeking an innovative and self-reliant executive sous chef with a minimum of 3-5 years of experience. Will help oversee the catering division, Happy Hour Program, Corporate Catering, and menu development for gourmet casual concept. Ideal candidate will have good eye for presentation, innovative with menu packages, good with budgets and controls, and be able to contribute both to our high end catering department and edgy fast casual concept!
Must be a strong team leader with experience in high end plated dinners for 500 guests, and enjoy training others. We cater predominantly onsite but also offsite. Off-site catering skills and organization experience necessary! Need to be extremely organized and efficient.
Job duties will include labor cost and food cost control. Menu development. Food Bible. Execution of large and small high end events. Must work well under pressure. Great team leader. Punctual. Self- Motivated. Ideal candidate will have experience with healthy and gluten free dishes. Knowledge on seasonal cooking and usage of herbs. Experience in packaged grab and go food a plus. Knows how to use Asian herbs and spices and have experience in Fusion cuisine.
A minimum of 3-5 years previous experience a Sous Chef, or Chef de Partie in a high volume, full service establishment is required for consideration.
MUST HAVE experience with French and Asian cuisines as well as healthy gluten free, vegetarian, and vegan dishes
Must have excellent plating knowledge and experience
Basic knowledge of Spanish preferred; bilingual preferred
Flexible schedule, available on weekends and evenings
*Supervision of and coordination of all kitchen activities
*Daily management of kitchen operations & oversight of employees preparing & cooking food
*Sanitation is a must and knowledge of food cost controls, inventory, and P&L statements
*Creative menu development
*Off-site catering events
*Must be Serv-safe Certified
*Can handle large production cooking & hustle
*Work Efficiently during high pressure
*Baking and Pastry Knowledge a plus
