About The LineUp at Wai Kai

The LineUp at Wai Kai is everything you love about Hawaii in an experience that's anything but typical. The LineUp brings the best of the island's activities -- surfing, stand-up paddle boarding, outrigger canoeing, dining, and entertainment -- as attractions never before available in one location, celebrating our deep connection to water. The LineUp is a meeting place for locals, aspiring surfers to pro surfers, and travelers alike. Construction began in October 2020 and is on track for opening Feb. 10, 2023.


JOB SUMMARY

The Lineup Chef is responsible for the operation of all food offerings at the Lookout, Wave deck and at Foam coffee and bar.

SUPERVISORY RESPONSIBILITIES:
  • As a key member of the Lineup management team, the Lineup Chef will work across all departments
  • Responsible for leading, hiring and motivating the entire culinary team
  • Directly supervise sous chefs, cooks, bakers, and dishwashers
  • Acting F&B manager on duty when F&B Director is off property
DUTIES/RESPONSIBILITIES:
  • Crafting of menus that cater to our customers needs including, vegan items, gluten free, diets de jour, pescatarians and other options that empower guests to eat what they want or to indulge a little bit
  • Craft simple, high quality, consistently executable menus that are valued by our guests
  • Creation and execution of profitable group and event menus
  • Focus on speed of production and consistency of production
  • Menus and procurement based on our core values of sustainability
  • Inventory management starting with purchasing through recipe costing to production, portion control, inventory software management inputting
  • Fine tune all systems as required
  • Mentoring of the culinary team and leading by example
  • Protecting our assets including food safety, equipment care and maintenance, coordination of preventative maintenance, time and temperature logs, waste management and cleanliness
  • Payroll management for the culinary department
  • Staff recognition and motivation
  • Budgeting and forecasting
  • Guest safety, food safety, cleaning procedures
  • Constant focus on creating memorable guest experiences every day in our competitive business environment
