Talerico Martin Corporation - Position Summary: As the Research & Development and Quality Assurance you will play an integral part in creating and developing new recipe concepts and reworking existing recipes for bakery concepts. As a R & D and Quality Assurance, you are an essential contributor to product development and innovation for our Bakery team. Reporting to the General Manager, Bakery Research & Development, you will bring the company forward and culinary focused mindset to improve or bring new products to the table for our customers.
You will work with customers from the initial product ideation stage all the way through commercialization and integration. _____________________________________________________________________________________ Key Job Responsibilities: Create unique, creative, and world-class new menu recipes so that the highest levels of bake quality consistency can be achieved under high volume production conditions. Identify and establish the critical components within the menu that help to maintain the highest bake quality standards for our company on a continuous basis.
Balance exceptional culinary creativity with real-world conditions and operational needs for a high volume, complex bakery concept. Rework existing recipes for improved bake quality, increased guest satisfaction and operational efficiencies. Conduct yield and performance analysis tests for all new and current ingredients under review.
Assist with Research & Development and Quality Assurance training, organizing, and presenting training activities and other special R & D events throughout the year. Appreciate the importance of continuing education and the need for on-going research in order to find answers to critical questions within the culinary arts and the field of baking industry. Understand and leverage trends to add value to our recipes development process.
Utilize classical and contemporary baking techniques to achieve the desired end-in-mind quality profile for all new recipes being developed. ____________________________________________________________________________ Physical Requirements: Work in and around confined spaces Climbing to various heights via stairs or ladders Exposure to manufacturing environments for periodic extended workdays to include loud noise, heat, cold, wet, and slippery conditions. Use of tools, equipment, and machinery.
Exposure to bake samples tasting and smells including all food allergens. ____________________________________________________________________________ Key Behavioral Competencies: Ability to recognize and encourage the behaviors that contribute to teamwork. Ability to communicate and work effectively with all associates in a team environment.
Able to work flexible schedule. Must be detail oriented. ______________________________________________________________________ Education and Qualifications: Ideal candidate will possess: BS in Baking Science, Food Science, or related field with 3 years' relevant work experience Experience in Product Development at a food company or in bakery industry.
2+ years experience as a Research & Development chef creating new items. Advanced culinary skills: proper knife handling and general kitchen equipment use. Superior ability to taste flavors and understand basic food science.
Knowledge of HAACP and proper sanitation procedures Strong communication skills - both verbal and written Proficient in Microsoft Office (i.e., Word, Excel, Power Point and Outlook) Advanced mathematical skills Average typing skills Ability to work on multiple projects.
