ESSENTIAL DUTIES AND RESPONSIBILITIES
Regular and consistent attendance F & B Director will review and approve recommendations and suggestions to hire, transfer, promote, reward, evaluate, discipline, suspend and discharge all employees in the Food & Beverage Department in a fair and equitable manner. F & B Director will handle all employee related matters referred by the Food & Beverage management staff, ensuring that employees are treated and dealt with in a fair and equitable manner. Develops and implements budget and strategic work plan, including capital projects. Recommends capital expenditures for acquisition of equipment, which would increase the efficiency and safety of operations. Gives input and ideas on how to increase profits and cut costs in all areas of the department. Works with the Senior Operations Director and the General Manager to develop an accurate operating budget. Develops and implements new market-leading innovative concepts, menus, and promotional activities pertaining to Food and Beverage in collaboration with Marketing and Sales. Works with the Marketing Department to ensure that all promotional material and operational preparations are communicated to the F & B staff. Conducts regular walk-through of restaurants and kitchens to monitor guest service, food quality, safety, cleanliness, and asset maintenance. Oversees and monitors department staffing needs. Conducts constant monitoring of internal affairs including scheduling, enforcement of policy and procedures, training and communication among and between all shifts. Regularly reviews and evaluates department performance, working with F & B management staff to take appropriate steps in resolving unsatisfactory results or conditions. Carries out regular, meaningful performance appraisals conducted in such a manner that effective, open two-way communication is maintained and to follow up and ensure that the agreed action and developmental plans identified at these appraisals are being effected. Ensures the Department’s Supervisors are conducting regular performance appraisals and are drawing up the appropriate action and developmental training plans using job descriptions as a guide. Reviews and analyzes on a monthly basis employee’s performance and highlights problems areas and takes appropriate action to rectify poor performance. Ensures that complaints or problems are acted upon without delay and that effective follow-up action takes place to avoid reoccurrences. Works with the Event Coordinator in the planning and advertisement of special occasions and promotions with the Food & Beverage Department. Ensures a maximum level of customer service and satisfaction throughout the property is achieved and maintained regarding our service to the Casino guests and patrons from the Food & Beverage employees. Promotes positive, open lines of communication with other departments that directly affect the Food & Beverage Department. Facilitates the flow of information and develops effective procedures by organizing and presiding over regularly scheduled meetings with the Food & Beverage Staff. Knowledge of Tribal Gaming Regulations and Federal, or State Laws as well as the company’s handbook, internal controls, policies, and procedures. Ensures proper purchasing procedures are followed in the areas of food, beverage, and operating items. Stays aware of current trends in the department’s industry and make suggestions how these could be implemented for the benefit of the company. Proficient with Hospitality POS systems, word-processing, spreadsheets, presentation, and electronic mail software. Other duties as assigned.
