Required Qualifications:

  • Three+ years of experience as a pastry sous chef in a predominantly scratch retail, club, hotel or restaurant bakery setting

Preferred Qualifications:

  • Certificate or diploma from a recognized bakery and pastry culinary arts training or degree program
  • Degree from a post-secondary culinary arts training program
  • Previous country club work experience
  • ServSafe Food Protection Manager Certification

Job Summary (Essential Functions)

Responsible for all pastry and bread production for a la carte dining rooms, banquets, club functions and special orders. Develops pastry-related recipes and ingredient purchase specifications with the Executive Pastry Chef. Decorates pastry items for special events such as buffets and receptions. Supervises bakery employees. Maintains highest professional food quality and sanitation standards. Covers work stations as needed. Exhibits effective teamwork and communication both within the bakery and to outside the departments. Must be able to work a flexible schedule and work well under pressure.

Job Knowledge, Core Competencies and Expectations

  • Knowledge of pastry production principles, including breads
  • Cake and other pastry decoration skills
  • Able to use kitchen equipment including large-capacity mixer, ice cream machine, convection oven, pizza oven, proofer, robo coupe or other food processor, and 40-gallon steam kettle
  • Ensures that work area is safe and secure
  • Attention to detail, knowledge of ingredients and an aesthetic/artistic eye
  • Adheres to state and local health and safety regulations
  • Maintains the highest sanitary conditions
  • Maintains high standards of quality and appearance of all food prepared and served
  • Ability to organize and execute multiple banquets and a la carte dining rooms simultaneously
  • Knowledge of and ability to perform required role during emergency situations

Job Tasks/Duties

  • Trains, supervises, and schedules all subordinate Bake Shop employees
  • Actively engages in the professional development of the bakery team
  • Consistently monitors quality of bakery production and takes corrective action as needed
  • Plans, prepares and decorates special pastry items, as necessary
  • Monitors, requisitions and orders supplies and ingredients in conjunction with the Executive Pastry Chef
  • Assures food cost budget is respected by the bakery
  • Ensures that high standards of sanitation and cleanliness are maintained throughout the bake shop at all times
  • Establishes controls to minimize food and supply waste and theft
  • Safeguards all bake shop employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles
  • Develops Bake Shop recipes and techniques for pastry production that help to assure consistent high quality; exercises portion control over bake shop items
  • Attends any necessary meetings and training sessions
  • Consults with Banquet Function Committee about pastry-related aspects of special events being planned
  • Evaluates Bake Shop products to assure that quality standards are consistently attained
  • Prepares all baked goods, puddings, gelatins, frozen desserts, stewed and baked fruits, pies, cakes, pastries, icings, custards, fondants, breads and fillings used in bakery preparations
  • Oversees pastry cart and buffet dessert table setup and presentation
  • Understands and consistently follows proper sanitation practices including those for personal hygiene
  • Performs other tasks and duties, as assigned

Licenses and Special Requirements

  • Food safety certification

Physical Demands and Work Environment

  • Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach
  • Push, pull and/or lift up to 50 pounds
  • Continuous repetitive motions
  • Work in hot, humid and noisy environment
