Paris Baguette Bon Doux, Inc. has an opening for a Senior Research and Development Manager of Bread & Pastry in Moonachie, NJ.
The position duties are as follows: The Senior Research and Development Manager will lead bread, pastry and sandwich bread research and development and production implementation for the company. Day-to-day job duties include:
● Manage the execution of in-depth research into U.S. market trends, including competitor products, to facilitate the development of new and innovative bread, pastry, and sandwich bread product lines on behalf of the company ;
● Oversee the development of new recipes for pastry, bread and sandwich bread products to be sold at Paris Baguette stores, including lines of multi-variation products for company-wide deployment ;
● Manage the testing phase of new product development, including directing trial-and-error testing and in-store testing, to ensure the successful rollout of new products ;
● Oversee the evaluation of raw ingredients and final products, including ingredient and labor cost calculations, domestic and imported raw materials sourcing, and purchase forecasting ;
● Collaborate with Paris Baguette’s South Korean affiliate to ensure bread and pastry doughs for export to the United States adhere to FDA regulations ;
● Lead the overall production implementation of the company’s bread, pastry, and sandwich bread products, including reviewing production orders and schedules to ascertain product data as such as types, quantities, and specifications and scheduled delivery dates in order to streamline and ensure consistency across production ; and
● Establish, improve and enforce production procedures and quality control management procedures, including the finalization of training manuals and nutritional data documentation, to ensure that all bread, pastry, and sandwich products follow Paris Baguette's standard food specifications and practices and ensure taste, presentation and superior quality of baked goods.
The position requires an Associate’s Degree in Culinary Arts or a related field or foreign equivalent, plus 5 years of progressively responsible experience with product development in the food & beverage industry. Experience must include:
- 5 years of experience with the production process of bread and pastry;
- 5 years of experience with dough, mixing, shaping, fermentation and baking technology;
- 5 years of experience generating bread & pastry manuals, and recipes; and
- 5 years of experience in managing bread & pastry product development projects.
