Old Scratch Pizza is one of Dayton's fastest-growing restaurant concepts, and voted "Best Pizza in Dayton" by Dayton.com and Dayton Magazine! We make Neapolitan-style wood-fired pies, and serve the finest craft beers in open, industrial spaces. The pace is fast, the work is fun, and the people are nice. We are seeking an Executive Chef to lead our culinary team across both (and future) locations. This position will support our pursuit of excellence by being the culinary driving force. This is a multi-faceted position that requires the ability to lead a diverse team, develop, train, and execute effective core-menu and special recipes, control costs, implement efficiencies, and embrace our technology platforms. The Executive Chef is highly knowledgeable of industry and culinary trends, has a high “Food IQ”, and is a confident, kind, charismatic leader. Pizza experience is not required, and this is an opportunity to master the art of Neapolitan pizza!
Reports to: Owner
Supervises: Kitchen Managers, Cooks, and Dishwashers
Lead the professional development of the culinary team including Kitchen Managers, Cooks, and Dishwashers.
Proactively recruit and hire to ensure appropriate staff levels.
Develop and execute culinary-focused training programs for BOH and FOH team members.
Well-planned development of menus and recipes for quarterly core-menu updates, and weekly pizza and shared-vegetable specials.
Continual refinement of core-menu recipes, ingredients and processes.
Develop processes for service that integrate BOH and FOH into a seamless operation.
Maintains processes that ensure BOH cleanliness and maintenance that ensures compliance with all local health department requirements.
Controls costs by monitoring and evaluating food, labor and operating expenses.
Maintains a collaborative process regarding menu development with the leadership team.
Is comfortable utilizing social media platforms to promote the business.
Handles and resolves all staff concerns and manages progressive discipline policies.
Overall responsibility for staff schedules and ensures adequate staffing for all service periods.
Works with Owner and General Managers to effectively promote and market the restaurants.
Maintain and develop relationships with our broad-line purveyors, as well as local and seasonal suppliers.
Monitor the maintenance of all BOH equipment and services.
Consistently strives for self-improvement through education and industry research.
Excellent knowledge of the food and beverage industry.
Pizza experience is not necessary (although helpful). We can train the pizza part, and we are more than a pizza place!
Able to thoughtfully develop menus and recipes, including advanced planning, costing, documentation, and training.
Competent with Mac computers, Google Drive and G Suite, and other industry-standard software.
Minimum of three years of kitchen management experience
Previous line cook experience
Some college preferred
