Food & Beverage Manager
Position is located at the "Epicenter" entertainment complex at Naval Station Great Lakes. The "Epicenter" is home to a 28 lane bowling center, 175 seat movie theater with a fast casual restaurant and sports bar operation within the facility.
MAJOR DUTIES AND RESPONSIBILITIES:
Incumbent exercises overall supervision of a $2M food & bar operation. This includes oversight of the business of planning, preparing, serving and delivering all food and beverages ensuring established operational profit goals are met. This also includes following guidance on brands and also adhering to retail inventory standards which make up the majority of business within the facility.
Incumbent is responsible for the oversight and selection of 35+ food & beverage employees, both full and part-time. This includes evaluation of the performance of each employee. Also works with General Manager for scheduling of entertainment and special events and promotions in the Epicenter. This includes wholesome, creative and trendy entertainment on a nightly basis.
Incumbent makes sure policies and procedures for the control and accounting for cash and other negotiable items are strictly followed. Incumbent serves as second in command behind the General Manager and makes periodic inspections of equipment and work areas and initiates repairs and adjustments; follows prescribed maintenance program and makes recommendations for timely replacements.

Qualifications: Must possess a thorough knowledge of restaurant, bar/night club operations, including administration, accounting, food preparation, food and beverage control, personnel, administration and purchasing specifications for food and beverages gained through actual experience (minimum of three years) and/or formal college degree in hospitality/restaurants management or related field.
