ROLE SUMMARY

The Food Safety and Quality manager will be responsible for the design, development, implementation and enforce all food safety and quality assurance programs across all Nando's North America restaurants and applicable suppliers. They will ensure all product delivered to Nando's restaurants meets legal requirements, specifications, and standards. They will guarantee timely information for customer service inquiries are complete, accurate, and legal. In addition, they will manage a seamless food quality assurance program.

KEY FOCUS AREAS

Food Safety Compliance

  • Define and lead the supplier audit and approval programs for external suppliers
  • To ensure that Nando's remains compliant with existing and new food safety compliance regulations as they are implemented
  • To manage an internal risk assessed supplier visit/audit program
  • To produce a quarterly summary activity of internal and external audits for cross-functional reporting and corrective action compliance
  • To ensure compliance contraventions identified by Health Dept. are resolved in a timely fashion
  • To ensure suppliers (& restaurants) are visited as appropriate to ensure production continues to meet specifications and investigate complaints, non-conformances & emerging issues
  • Advise on improvements required to deliver statutory or specification compliance
  • Attend first production runs as applicable

Supplier Relationship Management

  • Drive supplier excellence and compliance with a sense of urgency and attention to ensuring safe, quality product to the Nando's guest
  • Responsible for ensuring up-to-date product specifications are defined and held, and that all Nando's materials which rely on them are maintained accurately and in a timely fashion
  • The role is accountable in dealing with all product related complaints and queries from restaurants, from customers, from enforcement officials, are accurately responded to in a timely fashion; working directly with the applicable supplier for compliance and/or fast resolution
  • Develop Nando's supplier standards program (ex. GFSI)
  • To advise & support the food team in ensuring that only NPD ideas that fit their safety, quality & nutritional parameters progress to trial

Food Safety and Quality Improvement

  • Lead and manage the rollout of a Food Safety and Quality Assurance program in restaurants to identify and resolve non-conformances before they can have major restaurant impact
  • Oversee and drive a Food Safety culture within Nando's restaurant operations to build on current procedures and practices, thru training, and coaching
  • Mange the third-party audit program, evaluate performance and drive improvements in restaurants
  • Develop relationships with local health departments and keep HACCP documentation current
  • To ensure that the Food Team's process is effectively supported including but not limited to, product specifications and allergy/ nutritional data is supplied and analyzed prior to product sign off
  • Partner with marketing team to ensure allergy/nutritional data for publication on the website
  • Produce and maintain restaurant-facing materials such as allergen information (Inside Scoop), SOPs, Daily Print File(s) and Line Check book(s)
  • Maintain timely updates to appropriate databases for accuracy on technical complaint history, Allergy & Nutritional data for all products and menu items, Product related feedback from Zen Desk, Supplier approval & visit data, Non- conformances generated by supplier
  • Research and implement new technologies to enhance food safety, quality, and traceability, throughout the supply chain
  • Escalate unresolved issues as appropriate to respective colleagues in the Food/Commercial teams and suppliers to ensure these are resolved appropriately.
  • Advise other cross functional partners (operations, marketing, supply chain) on food related technical issues

ROLE REQUIREMENTS

  • Bachelor's degree in Food Science, Microbiology, Culinology, Environmental, Health & Safety or similar field is preferred
  • 5+ years in related experience Food Safety and/or Quality Assurance
  • Must have a passion for ensuring delicious, safe and quality food to Nando's guests
  • Experience with multi-unit chain restaurants strongly preferred
  • Knowledge of manufacturing processes and GMPs a plus
  • Knowledge in FSMA requirements and applications; GFSI and associated scheme knowledge a plus
  • Excellent training and presentation skills and the ability to explain food safety and quality concepts to those not specialized in the field
  • Ability to travel in North America to 25-50% of working time
