Job Description

Los Alamos Retirement Community is seeking a talented Executive Chef to lead the dietary department at Sombrillo Nursing and Rehabilitation, a beautiful skilled nursing facility and an integral part of our senior living campus. The Executive Chef consistently provides a fine dining experience for our residents and is responsible for the food service operation at Sombrillo Nursing and Rehabilitation. Surrounded by the Jemez Mountains, Los Alamos Retirement Community has been providing exceptional skilled rehabilitation, assisted living and long-term care services to the heart of Northern New Mexico for over 30 years. Duties and Responsibilities

  • Develop and maintain a file of approved standard recipes
  • Inspect kitchen, food storage rooms, utility closets, etc., for upkeep and supply control
  • Assist in planning regular and special diet menus as prescribed by the attending physician as well as develop individual diet plans for residents as needed
  • Process diet changes and new diets as received from nursing services
  • Maintain records of the residents food preferences and prepare menus accordingly
  • Ensure that charted food services progress notes are informative and descriptive of the services provided and of the residents response to them
  • Develop and implement an ongoing quality assurance program for the Food Services Department
  • Make daily rounds to confirm that dietary services personnel are performing required duties and to make certain that appropriate food services procedures are being rendered to meet the needs of the facility
  • Monitor absenteeism to ensure that an adequate number of food services service personnel are on duty at all times and make recommendations to Administrator to ensure that the dietary department is appropriately staffed
  • Ensure that food services personnel are trained to use labels and MSDSs to recognize hazards and to follow appropriate protective measures
  • Create and maintain an atmosphere of warmth, personal interest, and positive emphasis, as well as a calm environment throughout the facility
  • Monitor dietary personnel to assure that they are following established safety regulations in the use of equipment and supplies
  • Monitor to confirm that food services service work areas are maintained in a clean and sanitary manner
  • Maintain an excellent working relationship with other department supervisors and coordinate the dietary program to assure that residents have nutritious and delicious meals


  • Culinary Arts degree from a recognized school or university preferred
  • Proven prior experience as an Executive Chef or Assistant Executive Chef in a comparable size food service operation or five years of experience in kitchen work in medium to large organizations
  • Prior experience and training in cost control, food management, and diet therapy
  • Extremely skilled in culinary techniques including menu design, food preparation and artistic food design
  • Ability to create menu plans and seasonal menu cycles
  • Experience and/or knowledge of special diets and meal preparation for large groups
  • Proficiency in MS Office and Outlook
  • Excellent verbal and written communication skills
  • Willingness to work flexible shifts and multi-tasking required
  • Ability to hire, train, manage and lead food service team
