Job Description

 

Job Summary:

The position of Kitchen Manager is the highest management position within the Love Your Fat/Salad Club organization, reporting directly to owner Sarah Russo. The kitchen manager position includes the following responsibilities and the candidate must have specific attributes that will contribute to the success of this position.

Responsibilities:

  • Planning

    • Menu planning

    • Recipe writing (in-house and blog)

    • Ingredient research

 

  • Preparing  

    • Food costing

    • Managing prep cooks and staff (including training, scheduling, time clock, prep lists)

    • Managing pantry inventory and disposable inventory

    • Food deliveries and food pick ups (includes buying food)

    • Prep, order and assembly needs

    • Recipe builds with photos

 

  • Cooking

    • Lead chef on assigned days in the kitchen for Love Your Fat clients and Salad Club orders/subscriptions

 

  • Prof. Education 

    • Attend health/food workshops to further knowledge and understanding of current field

  • Cooking Classes 

    • Teach basic cooking classes (knife skills) and alternative/healthy cooking classes in person and virtually

  • Community

    • Create relationships with clients, local farmers/purveyors, people from health and wellness community for clients (dietitians and nutritionists) 

  • Communication

    • Daily recaps and notes for next manager on duty

    • Weekly recaps from weekend chef

    • All prep lists and excel documents updated and orders made

    • RO (1 month notice)

    • Detailed prep lists to daily cooks

    • Immediate updates to manager with client/subscriber/customer problems and immediate communication with client/subscriber/customer to solve all problems

    • Consistent communication with co-chefs and manager.  

  • Customer Service

    • Customer satisfaction at any cost. Always try to accommodate and satisfy client/customer/subscriber needs

  • Additional Responsibilities

    • Attention to food waste- Cross utilizing all the parts of the food we make: broth with carrot stems, etc. 

    • Research, Present, and Implement new on-demand delivery channels (trends) and opportunities

    • Build off the existing menu to develop catering menu options for on-demand and direct ordering

    • Build off the existing menu to infuse seasonality and specials

    • Following order trends and reacting accordingly: from sales and customer feedback. Example: swapping out our vegan salad for another with a more favorable dressing

  • Managing the kitchen culture

    • Comfortable communicating expectations, affirmation needs, and controlling/guiding the temperament of the kitchen

  • Detail Oriented: make sure we have everything we need in preparation. You should RARELY need to “go to the store really quick” to pick up something forgotten or not thought about

  • Understanding the bottom line and the impact of decisions on company 

 

Requirements:

  • 40-45 hours/week, days will vary (typically 5 days/week) 

  • Must be able to work 2 weekends a month

  • Ability to adjust schedule as needed with advance notice

  • Must be able to work between the hours of 9am-8pm
    Must have a car to use for transportation between office and kitchen and also for picking up ingredients, orders, and (occasionally) delivering to customers/clients

  • Must be able to lift 50lbs 

  • Ability to stand for long periods (8-12 hours) 

  • Culinary school education OR 3 years of professional cooking experience

  • MUST be on time

  • Responsible for ID Badge and Key 

  • Servsafe Kitchen Manager Certified 

  • Must use your own phone and computer 

 

Compensation and Benefits:

  • 1 month hourly review period / 40-45 hours per week $19/hour

  • After review period, option for full time employment at $48,000 per year

  • 10 days paid time off per calendar year

  • Major US Holidays Off
