Job Description
SUMMARY: Responsible for ensuring the efficiency and quality of food purchasing, receiving, storage as directed. Responsible for the efficiency of food preparation (from pre-preparation to plate presentation), sanitation of the production areas, and direct supervision of production on a shift to shift basis. Responsible for meal preparation for dinner service; as well as cold food prep and baking details. Completes the daily kitchen production as well as scheduled duties as directed by supervisor. Accepts responsibility of Cooks' duties in their absence. Accepts the responsibility of proper cleaning and sanitation of kitchen, dining areas, trash disposal areas, equipment, cookware, dishes, etc. Performs stock tasks as directed. Assists with all functions of the kitchen and meal service tasks as directed by supervisors. ESSENTIAL DUTIES AND RESPONSIBILITIES: include the following. Other duties may be assigned. Maintains the JSL Dining Services Retirement Communities philosophy and Vision statement. Assists the Chef with Schedules of daily kitchen production and food prep for on time meal service. Monitors preparation and service accuracy for all menu items to include recipes, proper food handling. Ensures food safety, proper temperatures, taste, consistency and portion control utilizing production sheets. Ensures diet restrictions (therapeutic and consistency when applicable). Prepares all required food products as scheduled in the cycle menu (up to and including therapeutic and mechanically altered recipes as scheduled), to include regular breakfast, lunch and dinner service and any catering or other special functions using Production Sheets and approved recipes. Assists Chef with supervision, training and documentation. Maintains confidentiality and effective communication within the management team. Follows proper handling, preparation and holding guidelines, takes temperatures at regular intervals and maintains foods in sufficient quantities while minimizing over-production and waste. Properly presents all food items and to provide maximum appeal and freshness. Assists Chef in Supervising organizing and sanitation of kitchen, storage areas and loading dock. Assists chef in supervising opening and closing of food service operation. Follows HACCP procedures and practices. Maintains kitchen sanitation and equipment cleaning schedule. Ensures proper communication with service personnel on proper portioning, plating, garnishing and presentation of food items. Includes information on special diets as needed. Communicates appropriately with all food service staff, supervisor and listens effectively. Performs any duty requested by Management to ensure the effective and efficient operation of Jewish Senior Life Dining Services Communities. QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Ability to initiate and implement necessary plans to assure proper food service for dinner, catering and special events. Ability to supervise. EDUCATION and/or EXPERIENCE: Minimum of five years high volume cooking experience required. College preferred, but not required. High School Diploma or GED required.
