Kitchen Manager

Central Production / Commissary Kitchen

Must be Bi-Lingual English / Spanish

$60,000 to $70,000 Base Salary

We are seeking an experienced Kitchen Manager to work at the central production kitchen for this growing Asian restaurant group.  With 15 locations and growing, this is the opportunity to take your career to the next level

JOB PURPOSE:

The Assistant Central Kitchen Manager manages Central Kitchen, the food processing kitchen, on a day to day basis. Focus is on the operations, which consists of managing the brand, ensuring food quality meets the brand expectation, managing inventory, and controlling costs as it relates to product and labor to ensure budgets are met.

OPERATIONS:

• Arriving to work on time to set positive example for employees

• Attending Front of House and Back of House Daily Camera Meetings as needed

• Ensuring Central Kitchen is staffed and set up for operations ensuring not to exceed labor budget

• Ensuring opening / closing, Daily Check Lists are completed

• Ensuring Central Kitchen is clean outside and inside of any debris

• Ensuring orders are sent correctly in the right quantities to the correct vendors for successful delivery

• Ensuring the accuracy of inventory

• Providing professional leadership to all teams and positions

• Able to communicate in a manner that achieves positive results

• Assisting in completing schedules and posting by date established

• Assisting in performing the interview process and hiring qualified staff

• Ensuring that all staff complete the appropriate paperwork correctly

• Provide training in all facets of Central Kitchen operations

• Opening and closing Central Kitchen

• Reading, understanding, following and enforcing the Employee Handbook, Training Guide, and Specific Departmental Standard Operating Procedures Manual including POS operations.

• Ensuring compliance with licensing and hygiene, health and safety legislation

• Ensuring USDA and health code guidelines are followed and monitored

• Able to work all stations if needed

 

 

COMMUNICATIONS:

• Communicating with staff and conducting Pre-shift meetings

• Able to communicate in a manner that achieves positive results

• Attending weekly management meetings to discuss concerns, giving suggestions and communicating any other pertinent information related to the operation.

• Ensuring that upper management is well informed of operation and any incidents that may require outside assistance

• Developing and maintaining a professional working environment for staff

• Maintaining confidentiality regarding all propriety information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“).

 

SYSTEMS:

• Performing accurate inventories according to the inventory schedule

• Ensuring orders are made accurately (accurate pars, correct nightly inventory counts)

• Engaging and maintaining good rapport with vendors and sales representatives

• Understanding of monthly financial results, and annual budgets for Central Kitchen.

• Assisting in the administration of approved financial budget and ensures budget numbers are met

• Monitoring and adhering to control systems to limit the possibility of theft

• Following accounting procedures as established
