The Registered Dietician/Nutritionist will oversee large-scale meal planning and preparation in health care facilities, company cafeterias, K-12 schools, and College and University dining halls. They may hire, train, and direct other dietitians and food service workers; budget for and purchase food, equipment, and supplies; enforce sanitary and safety regulations, and prepare records and reports.

Successful Dietitians are experts on all matters concerning diet and nutrition. They should be analytical, caring, and knowledgeable with good communication, active listening, problem-solving, and computer skills. They should also be passionate public speakers who can get others excited about eating healthy foods. Responsibilities include planning, organizing, developing, and directing nutritional care in accordance with current federal, state, and local standards, guidelines, and regulations that govern each facility. Works effectively with others to ensure that quality nutritional services are being provided on a daily basis, and acts as a resource to the Director of Dining Services to ensure that the dining services department is maintained in a clean, safe, and sanitary manner.

PRIMARY DUTIES AND RESPONSIBILITIES

  • Developing nutrition plans for clients.
  • Keeping informed about the latest discoveries in nutrition.
  • Create, write, test, and modify recipes and adjust with accuracy and within USDA guidelines taking into consideration product availability, specifications, standard item lists, and delivery logistics.
  • Oversee large-scale meal planning and preparation in health care facilities, company cafeterias, and schools.
  • Enforce sanitary and safety regulations; and prepare records and reports.
  • Prepare cycle menus with supporting recipes, inventory, and production records.
  • Speaking to groups to promote healthy eating habits and proper nutrition.
  • Conduct comprehensive nutritional assessment, education, and management to
  • Provide instruction for use of modified diets as it relates to health
  • promotion and chronic conditions.
  • Coordinate, implement, and evaluate nutritional education using National standards
  • and guidelines
  • Develop and deliver educational programs and appropriate teaching tools for various
  • ethnic and cultural groups to support understanding of nutrition.
  • Prepare nutrition-related presentations and present them to various audiences.
  • Miscellaneous duties and projects as assigned.

EDUCATION and/or EXPERIENCE

  • Bachelor’s degree in nutrition, health, or a related field
  • Minimum three years of progressive culinary/school food service experience
  • Knowledge of food and industry trends with a focus on quality, production, sanitation, equipment, food cost controls, and presentation
  • More education or experience may be preferred
  • State licenses or additional certifications required
  • Exceptional communication, problem-solving, public speaking, and listening skills
  • Willingness to continue training and research to keep current on the latest discoveries and developments in the field
  • Strong computer and data entry skills
  • Valid Driver’s License and ability to travel approximately 75% of the time
  • Must possess the ability to work a flexible schedule
  • The ability to operate in a diverse environment with a focus on client and customer services
  • Solid organizational and time management skills to meet deadlines in a high-pressure environment
