*JOB DETAILS

  1. Assists in the planning, developing, organizing, implementing, evaluating, and directing the Dietary Department, its programs and activities in accordance with departmental policies and procedures. Participates in making recommended changes to departmental policies and procedures.
  2. Assists in supervising dietary department employees, including:
    1. Assists in recruiting, selecting, and training competent department personnel.
    2. Assists in evaluating employee performance, and makes recommendations to the Administrator concerning wage and salary adjustments, hiring, terminations, and transfers. Monitors and corrects job performance of employees through effective discipline.
    3. Assists in scheduling department working hours, personnel, and work assignments to maintain quality resident care. Receives calls and finds replacements for absent staff. Authorizes overtime as necessary. Reviews time cards. Maintains attendance records.
    4. Receives and resolves staff complaints.
  3. Completes management duties, including:
    1. Assists in the development of the department budget and maintains costs within budgeted parameters. Maintains current records/reports that reflect department expenditures.
    2. Complies with Corporate purchasing contracts and programs. Selects food and supply vendors as allowed. Conducts cost comparisons when appropriate.
    3. Works with Recreation and ancillary departments to determine most cost effective food items for resident programs and special functions.
    4. Develops and utilizes inventory control procedures. Purchases food, supplies, and equipment as required to meet the needs of the department. Utilizes the menu, recipes, and current census when ordering food. Ensures that adequate levels of food, supplies, and equipment are maintained to perform department functions.
    5. Maintains the security of the department.
    6. Reviews and evaluates the department’s work force and makes recommendations to the Dietary Services Director and/or Administrator.
    7. Assists in developing and participates in programs designed for on-the-job training and orientation classes.
    8. May schedule and/or conduct routine in-services for department personnel, in conjunction with the Dietary Services Director and registered dietitian. Holds routine departmental meetings. Provides education to other departments in the facility regarding Dietary Services.
    9. Participates in various meetings and committees as required by regulations and as appointed by the Dietary Services Director or Administrator, i.e., Resident Council, Food Committee, Department Head, Safety, etc.
    10. Routinely audits the dietary areas and practices for compliance with current regulations and policies (i.e., meal service, sanitation, food temperatures, etc.). Monitors adherence to cleaning schedules and dishmachine/refrigeration temperature sheets
    11. Reports all hazardous conditions/equipment to the Administrator immediately.
    12. Reports all accidents/incidents as established by department policies. Completes and files reports as directed.
    13. Reviews complaints and grievances and makes necessary written/oral reports to the Dietary Services Director or Administrator.
  4. Completes meal service duties, including:
    1. Adheres to corporate menu/recipe program. Documents appropriate menu substitutions according to policy.
    2. Assures that preplanned menus are implemented utilizing bread/dairy order guides and pre-prep/thaw guides, food items are prepared according to the menu and diets, and standardized recipes are utilized.
    3. Assures that menus are posted for residents and dated menus are maintained per state regulations.
    4. Processes diet orders and changes promptly.
    5. Establishes food service production and service procedures to ensure that meals are prepared on time and served efficiently through development of position work schedules/timed activities.
    6. Develops methods for determining quality and quantity of food served through production sheet implementation and adherence to standardized recipes.
    7. Checks food production and service to ensure proper safety and sanitation procedures are maintained through routine meal service, safety, and sanitation audits.
    8. Monitors food temperatures and quality at point of service through routine test tray audits. Ensures food temperatures are recorded prior to each meal service.
    9. Ensures that snacks are available for residents who require a snack or supplement as part of their nutritional care plan, physician’s order, prescribed diet, or per federal regulations.
    10. Completes routine resident meal satisfaction surveys.
    11. Visits residents upon admission and periodically to complete a diet history and determine food preferences.
    12. Maintains a dietary kardex or similar record of diet orders and food preferences. Ensures an accurate tray card/ticket is available for each meal for each resident.
  5. Completes additional duties as assigned which may include:
    1. Participates in long term care and other survey processes. Maintains a presence at all times while surveyors are on-site and directs the timely collection of information required by the survey team. Demonstrates concern for identified problems and undertakes corrective action while survey is in progress, if appropriate.
    2. Delegates authority, responsibility, and accountability to other responsible department personnel.
    3. Maintains confidentiality of all resident care information to ensure resident rights are protected.
    4. Completes work assignments timely and accurately.
    5. Adheres to dress code.
    6. Maintains equipment in proper working condition.
    7. Performs other duties as assigned.
