Job Description

Job purpose

The Lead Chef is responsible for preparation and quality of all food and food-related items for Fairhaven residential facility. The Chef will coordinate and oversee a multi-specialty team to provide comprehensive food services that lead to successful treatment outcomes. The Chef is responsible for directing the overall operation of the food preparation areas in accordance with current federal, state and local standards, guidelines and regulations and ensuring that the food service operation is maintained in a clean, safe and sanitary manner. The Chef will provide services and client care in accordance with Fairhaven policy and procedures.

 

Duties and responsibilities

Meal and Kitchen Duties

· Provide overall leadership and management of the daily operations for meal preparation

· Work closely with Food Services Manager to coordinate resource acquisition to meet individualized client needs

· Provides training to new team members as directed by the Human Resource Manager or Food Services Manager

· Direct the overall operation of the food preparation area in accordance with current federal, state and local standards, guidelines and regulations and ensuring that the food service operation is maintained in a clean, safe and sanitary manner

· Teach cooking classes or provide individual cooking sessions as directed by the Food Services Manager or Clinical Team

· Establish and maintain standards for storing and preparation of food

· Establish and maintain procedures to meet safety and sanitation standards in order to assure compliance with government regulations

· Inform Food Services Manager of needs in appropriate quantities based on the menu within the parameters of established timeline.

· Supervise receiving and storing of food

· Monitor food temperatures

· Contribute to menu and recipe development as needed

· Attend weekly Nutrition Staff Meeting

· Complete all required documentation in a timely and comprehensive manner

· Support the long-term clinical and business success of Fairhaven

· Take on additional responsibilities as needed based on unique skillsets and programming, clinical, business and marketing needs of Fairhaven

 

Direct Client Care

· Fully understand and comprehend current and future Fairhaven Policies and Procedures for Employees and Clients

Facility Maintenance and Security

· Maintain the cleanliness of the kitchens with primary focus on the prep areas and dining areas

· Report any damage and/or maintenance issues to the Facility Manager

Fairhaven Client Experience

· Take ownership and pride in being part of the client care team to deliver quality client care and support

 

Qualifications

· Culinary training or equivalent cooking and production experience

· A minimum of 2 years working in a food preparation/supervisory position preferred

· ServSafe or other recognized hygiene qualification required

 

Working conditions

Outpatient treatment services are 6 days per week (Monday – Thursday from 10:00 AM to 8 PM, Friday 10:00 AM to 5:00 PM and Saturday from 10:00 AM to 2 PM). Employees can expect to work on nights, weekends and holidays depending upon specific job role. Residential treatment services are 24 hours per day, 7 days per week, 365 days per year. Employees can expect to work on nights, weekends and holidays depending upon specific job role and location. Fairhaven Treatment Center clients can be expected to have a severe trauma history, complicated by co-occurring conditions such as chemical dependency, dissociative disorders, severe PTSD, and other emotional and behavioral disorders. Prospective employees with a history of eating disorders, trauma or related conditions are advised to strongly consider the appropriateness of this work environment on personal mental health condition. All Fairhaven prospective and current employees are advised to seek treatment from a qualified medical or behavioral health professional in the event of a history of mental illness. As an eating disorders treatment facility, employees in client-facing roles can be expected to eat meals with clients. Employees in client-facing roles must be able to demonstrate a healthy relationship with food as demonstrated by conforming to Fairhaven treatment standards.
