General Manager:
About the Position
The General Manager is responsible for all brewpub activities and assumes responsibility for the brewpub as needed. The GM works to ensure that all activities are consistent with and supportive of the brewpub’s business plan. The GM ensures all employees (managers, chefs, foh and boh employees) are performing their job responsibilities and meeting expectations in all areas of their job descriptions.
Daily responsibilities may include:
Financials:
- Regular checking of financial reports on the accounting program
- Regularly reviewing labor (FOH and BOH) and COGs percentages
Weekly Meetings and Management:
- Managing the floor on higher volume days and nights
- Creation of meeting agendas
- Delegation of tasks and deadlines
Hiring & Training:
- Posting for jobs
- Reviewing potential new hires
Training & SOPs:
- Creation and updating of all training manuals
- Creation and updating of all FOH SOPs and checklists
Scheduling:
- Management of management request off and availability sheet(s)
- Scheduling of all Management staff
- Supervision of FOH schedule and of shift changes/swaps
Accounting Program:
- General management of accounting program and ensuring standard procedures
- The setting of budgets and goals
Retail:
- Acquiring pricing quotes
- Circulating retail ideas for management team input
- Ordering and POS entry/pricing for retail items
Events:
- Oversight and management of weekly events with Events Manager
- Assist in concepting and execution of new events, dinners, tastings, etc. (work with Events Manager)
Bar Management:
- Approving new bar items/pricing
- Assist with recipe costs (assist Bar Manager)
BOH Oversite:
- Review of Labor and COGs number weekly
- Review of new specials items and costing
- Posting for BOH hiring needs
- General attention to standards, procedures, and execution of jobs
HR & Related:
- Creation of write-up and termination SOPs
- Creation and maintenance of the Employee Handbook
- Issuing of write-ups and disciplinary forms
- Termination of employees
- Recording ALL employee injuries at work on the incident report form
- Recording any relevant occurrences with employees or guests on the incident report form
Future & Growth:
- General conception and execution of promotional ideas
- Executing necessary tasks to gear up for seasonal changes (patio, winter, holidays, etc.)
