Position Title: Restaurant Manager
Department: R & B
Report to: Director of Restaurant
Nature of the Job
Basic Purpose & Objective of the Position
To assist the Director of Restaurant in planning, organizing, directing, and coordinating the team members and resources for efficient, well-prepared, and profitable service of restaurants and bars.
Main Duties
Customer Services
- Delivers the brand promise and provides exceptional guest service at all times.
- Provides excellent service to internal customers.
- Handles all guest and employee complaints and inquiries in a courteous and efficient manner. Communicates immediately all guest and employee complaints to the Director of Restaurants & Bars.
- Maintains positive guest and colleague interactions with good working relationships.
Financial
- Ensures that all hotel, company and local rules, policies and regulations relating to money handling and licensing are adhered to.
Operational
- Works with the Director of R&B and Chefs and other team members to plan menus that are flavorful and popular with customers.
- Estimates food and beverage costs. Works with the Director of R&B and Chefs for efficient provisioning and purchasing of supplies. Supervises portion control and quantities of preparation to minimize waste. Performs frequent checks to ensure consistent high quality of preparation and service.
- Supervises operation of restaurants and bars to maximize profitability, minimize legal liability, and conform to the regulations of the alcoholic beverage commission.
- Works with other management personnel to plan marketing, advertising, and any special restaurant functions.
- Works with the Director of R&B in hiring, training, and scheduling of food service team members.
- Investigates and resolves complaints concerning food quality and service.
- Enforces sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas.
- Complies with all health and safety regulations.
- Reviews and monitors, with bookkeeper or other financial personnel, expenditures to ensure that they conform to budget limitations. Works to improve performance.
People Development
- Supports Swire Hotels’ cultural and people development implementations and characteristics.
- Supervises on-going training initiatives.
- Uses all available on the job training tools for employees.
- Communicates performance expectations in accordance with job descriptions for each position.
- Coaches and counsels employees regarding performance on an on-going basis.
Other Duties
- Attends and contributes to all training sessions and meetings as required.
- Exercises responsible behavior at all times and positively representing the hotel team and Swire Hotels.
- Maintains strong, professional relationship with relevant representatives from competitor hotels, business partners and other organizations.
- Reads the hotel's Employee Handbook and have an understanding of and adheres to the hotel's rules and regulations and in particular, the policies and procedures relating to computer resources, fire, hygiene, health and safety.
- Ensures high standards of personal presentation and grooming.
- Responds to changes within Guest Experience, as dictated by the industry, company and hotel.
- Carries out any other reasonable duties and responsibilities as assigned.
Skills, Qualifications and Experience Requirements
- Bachelor’s degree in hotel/restaurant management is desirable. A combination of practical experience and education will be considered as an alternate.
- Good organizational skills for dealing with diverse duties and team members.
- Pleasant, polite manner for dealing with public as well as team members.
