DoubleTree by Hilton Torrance - South Bay is looking for a Director of Food & Beverage to join our team. Our ideal candidate is attentive, motivated, creative and engaged.

ESSENTIAL JOB FUNCTIONS/AREAS OF RESPONSIBILITY:

Ensure all guests have good experiences with the hotel’s food service, whether eating at the restaurant, ordering room service or having a special event catered by the establishment. The Director of Food and Beverage must serve as the face of the hotel’s food service exhibiting both poise and strong communication skills.

Direct all functions of administration and planning of the Food and Beverage Department to meet the daily needs of operation including training of all personnel, hiring the best and most talented applicants to keep turnover a minimum and acknowledge department budgets when coordinating shift schedules to achieve a profitable result.

Clearly describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub departments, e.g. room service, restaurants, banquets, kitchens, steward, bar, outlets, etc., preserving excellent levels of internal and external customer service. Responsible for inventory, purchasing of alcohol and beverages, items necessary for operations of food & beverage. Shop for prices 2-3 times a year for best products/prices.

Develop, implement and monitor schedules for the operation of all restaurant, bar and banquets to achieve a profitable result while nurturing an ownership environment with a high emphasis in motivation and teamwork.

Oversee social media & marketing in conjunction with Hilton standards for F&B, for promotion of outlets, banquets, events and ads with promotions.

Participate with the General Manager, Chef, Catering Managers and Director of Sales & Marketing in the creation of exceptional and merchandising menus designed to attract a predetermined customer market and continuously make necessary improvements to any areas lacking in excellence.

Implement effective cost control of food, beverage and labor costs among all sub departments, purchasing reviews, and maintain inventory to ensure all orders can be fulfilled.

Assist the area managers in establishing and achieving predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion upsell while maintaining all standards set by Hilton Worldwide, all Department of Health Regulations both at the state and federal level, in conjunction with various chemical and appliance venders (Ecolab, Ecosure, etc.) used on premises. Follow Hilton standards and Event Stay guidelines and train staff accordingly.

Regularly review and evaluate the degree of customer acceptance of the individual restaurants and banquet service.

Prepares the actual yearly budget ensuring revenue and costs are kept in line as well as preparing the capital expense reports for approval. Reviews P/L, meets and exceeds goals and KPI – for labor, expenses and profit.

Continuously evaluate the performance and encourage improvement of the personnel in the food and beverage department. Plan and administer a training and development program within the department which will provide well trained employees at all levels and permit advancement for those persons qualified and interested in career development.

Qualifications

Must consistently exhibit a professional demeanor in all interactions with guests, team members, and all hotel ownership and/or management, and its representatives.

Must be able to consistently report to work on time as scheduled, in professional dress, and be prepared to work as scheduled including Holidays and special events. Flexible schedule is a must.

Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to defuse anger, collect accurate information and resolve conflict.

Ability to read, listen and communicate effectively in English, both verbally and in writing.

Ability to access and accurately input information using a moderately complex computer system.

Hearing, smelling, tasting and visual ability to observe and distinguish product quality and detect signs of emergency situations.

Ability to move throughout all food and beverage areas and hospitality suites and continuously perform essential job functions.

Extensive experience in restaurant, bar, banquet, stewarding, kitchen, sales, catering and management required. Prior Hotel F&B experience preferred.
