We are seeking a dynamic Food & Beverage leader to provide executive leadership and daily management of the casino Food & Beverage operations working in partnership with department management to ensure quality service while maximizing profits.PRINCIPAL ACTIVITIES & RESPONSIBILITIES:Create and enforce strict sanitation standards in all F&B areas to ensure that applicable health standards are consistently met.Direct food and beverage quality output and creativity by the development of menus, recipes, and specials that compliment the operations of The Mill Casino-Hotel and are focused on the demographics of its markets.Assure every F&B employee is trained in proper food handling and sanitation requirements and are certified as required by law including all OLCC requirements and internal controls.Maintain a level of guest service excellence by assuring that all employees are trained and executing Million $ Service and standards of operation in Food & Beverage.Develop and follow all F&B... budgets for each food outlet to include monthly forecasts.Oversee banquet proposals, set up, food preparation and presentation in conjunctions with Sales & Executive Chef and execute all F&B Banquet functions to meet the contractual expectations of each client.Work with the Purchasing Dept. to ensure kitchen inventory levels and storage areas are maintained based on current business levels to operate within expected health and productivity guidelines.Resolve guest concerns, generate correspondence and evaluate results of guest satisfaction surveys addressing areas of concern and make appropriate adjustments in guest service based on guest feedback.Assist in the development of marketing concepts and ideas that populate the gaming floor through an increase in F&B Sales.Control efficiencies in F&B cost of sales.

Put in place data to verify and maintain these efficiencies. Inspect the property daily within areas of responsibility for cleanliness and appearance.Learn and become efficient in the management of the point of sale system; inventory control systems; and other operating systems for the food outlets.Participate on the executive committee and actively support the vision, mission and values of the organization.Develop and implement policies and procedures for the F&B Dept.Encourage the development of tribal member employees following The Mill's Tribal employment preference policies.Perform other duties or special projects as assigned by GM/CEO
