Dietary Manager responsibilities:
Enforces dietary policies and processes with the assistance of the Consultant Dietitian.
Represents Dietary Department at staff meetings.
Verifies compliance with both State and Federal standards.
Obtains food supplies in appropriate quantities based on the menu.
Supervises proper receiving and storage of food.
Supervises food preparation; verifies high level of food quality and compliance with food service regulations.
Verifies high sanitation standards. Maintains cleaning schedules.
Verifies proper equipment maintenance in cooperation with ED and Maintenance Department.
Assists in maintaining controls to ensure dietary costs are within budget, including food/supplements, labor, supplies and equipment.
Prepares meals and/or perform functions of Cooks and Dietary Aides in instances of unscheduled absences and to moniter meal service quality and procedural accuracy.
May be scheduled to routinely perform Cook or Dietary Aide functions.
Participates with Department Manager and Director in dietary staff selection, supervision and termination.
Schedules Dietary Department employees.
Plans and conducts ongoing in-service training.
Visits residents to obtain food preferences and assists with nutritional assessment.
Communicates appropriate information to other members of the health team.
Maintains essential records.
Food Service Manager requirements:
Meets the qualifications for a Dietary Manager/ CDM set by the state regulations.
Serve Safe Certification preferred.
Prior Dietary Manager experience strongly preferred.
Must have the ability to read and write in English, including units of measurement used in food preparation.
Ability to perform moderate to heavy lifting, bending, reaching, and stooping.
