Executive Chef

The Executive Chef will cook different and delicious food items, while leading the kitchen staff team and managing the inventory of food and supplies for the week. The Executive Chef will be responsible for creating the restaurant's menu and adjusting it depending on the seasonality or availability of food. The Executive Chef reports to the Culinary Director.
Responsibilities:
oPlan and direct food preparation and culinary activities
oModify menus or create new ones that meet quality standards
oEstimate food requirements and food/labor costs
oSupervise kitchen staff’s activities
oOversee portion control and quantities of preparation to minimize waste
oArrange for equipment purchases and repairs
oRecruit and manage kitchen staff
oRectify arising problems or complaints
oGive prepared plates the “final touch”
oPerform administrative duties
oComply with nutrition and sanitation regulations and safety standards
oMaintain a positive and professional approach with coworkers and guests
oCommit to passionately, intensely, uncompromisingly humble hospitality and high-quality guest experience
oHandle volume and stress with aplomb and finesse
oHold the standard of high-quality food above all else
oUnderstand that simple, rustic, authentic food takes as much – if not more – talent as big complicated plates
oExcellent record of kitchen management
oAbility to spot and resolve problems efficiently
oCapable of delegating multiple tasks
oCommunication and leadership skills
oKeep up with cooking trends and best practices
oHours may vary if Executive Chef must fill in for his/her colleagues or if emergencies arise
Skills:
oShare the passion for food, wine and the guest experience
oMaintain a close relationship with the people that grow, forage, fish and fabricate our ingredients, making sure their standards are as high as ours
oWorking knowledge of various computer software programs
Education/Experience:
o8-years of experience
oCulinary Arts Degree
oHigh volume restaurant experience is a plus
