Meat / Food Scientist

Looking for an energetic-self-starter to join our team at Amylu Foods. The open position of meat/food scientist will manage and execute projects for product development/formulation, batch test, scale-up and commercialize new products and process improvement of existing products.

Job Functions

  • Manage product development and approval processes which include project definition, identifying business needs, Benchtop creation of prototypes and production test trials.
  • Ability to run the following meat processing equipment: Grinder, Mixers, Vemag Stuffer, Smokehouses, Spiral Oven, Freezer, Packaging Machines
  • Identify customer needs and translate these into new product opportunities in collaboration with sales/business management/marketing partners and customers to provide technical assistance to the sales team and customers; collaborate with external stakeholders, including but not limited external chefs/scientists, act as the technical liaison and representative to the customer; translate customer ideas into a viable product
  • Plan, schedule, communicate and coordinate raw materials for plant testing.
  • Gather, data points, document, and analyze test results; recommend and build production parameters
  • Create and maintain manufacturing specifications and technical documentation following internal processes; ensure optimum product quality at the best throughput is delivered.
  • Develop, create and maintain continuous improvement initiatives through optimum processing procedures.
  • Identify, modify, and implement short and long-term initiatives/programs/products including but not limited to, innovation, renovation, and brand maintenance of experimental and commercial products in collaboration with plant personnel.

Qualifications

  • Bachelor’s degree in Meat Science or Food Science or four (4) years’ equivalent experience
  • Four (4) years’ experience in cooked/processed meat products
  • Two (2) years of experience in cooked meat and two (2) years of experience in other cooked/processed meat products

Knowledge, Skills and Abilities

  • Experience with retail or foodservice manufacturer and extensive experience in collaborating directly with customers and manufacturing facilities.
  • Excellent written and verbal communication skills.
  • Strong leadership qualities.
  • Strong analytics, grammar and writing skills.
  • Demonstrated project management skills/experience.
  • Must be organized and detail oriented with an ability to prioritize and meet deadlines
  • Ability to self-start, create best practices and find creative solutions to potential roadblocks.
  • Understanding of ingredient functionality and formulas
  • Familiarity with multiple proteins (Poultry, Beef, Pork, Plant Based)
  • Understanding of USDA regulations
  • Ability to identify problems, review information to develop and evaluate options then implement solutions in a dynamic and ambiguous environment
  • Demonstrated ability to communicate across all levels of the organization; must be able to clearly articulate technical information to a non-technical audience both verbally and in writing
  • Ability to build professional relationships with cross functional teams while facilitating a collaborative environment
  • Possess troubleshooting and organizational skills and apply them to changing priorities
  • Good knowledge of Microsoft Office, including skills with Outlook, Word, and Excel

Environmental/Working Conditions

  • Able to work in a facility with varying temperatures (34 ̊ F to 95 ̊ F) for prolonged periods of time.
  • Ability to lift and move up to 50 pounds
  • Ability to work in wet and cold environments for prolonged periods of time
  • Sense of smell and taste

Physical Requirements

  • Usual plant environment with frequent sitting, walking, and standing, and occasional climbing, stooping, kneeling, crouching, crawling, and balancing. Frequent use of eye, hand, and finger coordination enabling the use of machinery and equipment. Oral and auditory capacity enabling interpersonal communication as well as communication through automated devices such as the telephone. The noise level in the work environment ranges from normal office levels to loud levels due to equipment and machinery use.

Company Description
Yes, there really is an Amylu! A pioneer in the chicken sausage category, Amylu’s grandfather, Leon Tiahnybik founded Leon’s Sausage Company in Chicago in 1924 to share the Old World recipes that he’d brought with him from Europe with his new country.

Amylu started learning traditional European sausage making from her Grandpa Leon while she was still in grade school. She would take the el down to the plant in Fulton Market after school and then drive home with Leon at the end of the work day. She loved working side-by-side with her grandfather, and it was then that she discovered her passion and talent for making delicious and creative sausages.

Fast forward to 1992, when Amylu began research and development on chicken sausages that were grounded in the Old World artisan sausage-making that she had learned from her grandfather. It wasn’t easy, and it took her two years of experimentation in her kitchen before she was ready to introduce the Sausages by Amylu brand in 1994.

Today, Amylu Foods continues to manufacture a wide range of traditional ethnic and specialty sausages, in addition to the full line of exciting Amylu’s Chicken Sausages, Chicken Burgers and Chicken Meatballs.
