Job description

Position Summary
The Pastry Sous Chef is a hands-on leadership role responsible for overseeing both pastry production and service execution. This position supports and reports directly to the Executive Chef, ensuring seamless collaboration between pastry and savory teams. The Pastry Sous Chef will lead by example in maintaining the highest standards of quality, consistency, and presentation, while mentoring and developing the pastry team.

Key Responsibilities

  • Oversee and actively participate in daily pastry production and service to ensure excellence in execution
  • Lead the pastry team during service, ensuring timely plating, consistency, and adherence to standards
  • Train, mentor, and develop pastry cooks, fostering growth and maintaining a high-performance team
  • Collaborate closely with the Executive Chef on menu development, seasonal changes, and special offerings
  • Maintain and enforce all recipes, prep lists, and plating standards
  • Monitor inventory, ordering, and cost controls to support financial goals
  • Ensure compliance with all food safety, sanitation, and DOH regulations
  • Maintain a clean, organized, and efficient kitchen environment
  • Step into a leadership role in the absence of senior culinary leadership

Qualifications

  • 3–5+ years of pastry experience in a fine dining or high-volume environment
  • Previous leadership or supervisory experience required
  • Strong background in both pastry production and à la carte service
  • Proven ability to train and develop team members
  • Excellent communication and organizational skills
  • Ability to work under pressure while maintaining attention to detail and quality
  • Passion for hospitality and delivering a luxury guest experience

Physical Requirements

  • Ability to stand for extended periods of time
  • Ability to lift and carry up to 50 lbs
  • Flexible schedule, including mornings, evenings, weekends, and holidays
